LOVE & LEMON.  I have bookmarked this page on my desktop for easy access.  I love an easy to read and follow cookbook loaded with good clean eats.  I am a huge fan of healthy foods.  I actually crave healthy foods.  This recipe is chocked full of color and refrigerator staples. There is also a cardamom yogurt sauce that accompanies this dish and is a great lite sauce to have ready for garnishing most meals.  This recipe calls for greek yogurt but, because of sensitive cows dairy issues in my home including myself, I replaced the greek yogurt option with a nut-milk yogurt.   Most of the cookbooks that I own lean more on the side of ingredients that I naturally keep on hand.  This makes meal prep and snacking easy to access whenever the mood strikes you to create a new dish or follow any recipe.  I have learned a few new tricks over the recent years with so many new healthy food trends.  I treat new food trends like new fashion updates.  I look forward to being inspired by MANY trends but, I make sure to do my homework first.  This ensures a safe and successful lifestyle.  I would love to see your version of this recipe or any other recipe.  Please leave me a comment about any recipes that you would like to share.  ENJOY!

 This recipe calls for broccoli.  I can not eat broccoli.  A doctor diagnosed me and discovered that I am allergic to broccoli.  ODD!  I miss eating broccoli.  Sad face!  So, I simply replaced the vibrant green veggie with another.  This recipe also calls for cashews but I did not have cashews on hand so I replaced the nuts with another.

 Finished product.  Time to post and share.   A few members of my family always want to have a meat source on hand, this is of course up to your discretion.  For me, this meal is complete as is. You can add chicken, fish, shrimp or steak for those hardier stomach demands in your family.  ENJOY!
